Hot Ham and Cheese Party Sandwiches
from Mary Gail Milner, Quitman, Tx
INGREDIENTS
DIRECTIONS
2 pkgs (12 pack) Sweet Hawaiian Dinner Rolls
1 1/2 lbs deli shaved ham (not honey ham)
12 slices Swiss cheese (tear each slice into 4 pieces)
1 stick real Butter
2 tsp Worcestershire sauce
1 tsp garlic powder
1 tsp onion powder
1 tsp poppy seeds

Slice rolls. Put shaved ham and 2 small pieces cheese on each sandwich. Place tops of rolls on cheese.

Mix other ingredients in sauce pan until butter melts
-
Brush over sandwiches. Cover with foil.

Refrigerate an hour or overnight
-
Bake in 375Ëš oven for 15 minutes or until cheese melts
Note: Sandwiches can also be baked immediately after preparing
Beans and Sausage

INGREDIENTS
DIRECTIONS
2 large cans pork and beans
1/2 cup honey
6-8 jalapenos, chopped
1 pkg dry Lipton onion soup mix
1 lb beef sausage or Polish sausage, sliced

Combine all ingredients
-
Cook in crock pot several hours
-
Stir occasionally
Great for taking to potlucks!
Burritos (Mexican Casserole Base)
INGREDIENTS
DIRECTIONS
1 1/2 lbs ground beef
chopped onion, to taste
1 10-oz can cream of chicken soup
1 10-oz can cream of mushroom soup
1 can enchilada sauce
1 small can green chilies (optional)
grated cheddar cheese

Brown meat and onion in small amount of oil
-
Add other ingredients and cook until well-mixed
-
Spoon sauce into flour tortillas
-
Roll and cover with small amount of sauce and grated cheese or Rotel cheese dip
-
Serve with picante sauce and tortilla chips
Sloppy Joes / Skilletburger Supper
INGREDIENTS
DIRECTIONS
1 lb hamburger
chopped onion (to taste) I use dried onion flakes
chopped celery (to taste) Can use celery flakes
or seasoning
1 tsp salt
black pepper
1 can condensed tomato soup
1 1/2 tsp bottled barbecue sauce

Brown meat in small amount of hot oil
-
Add onion and celery; cook until tender
-
Add remaining ingredients
-
Cover and simmer for 30 minutes
-
Serve on toasted buns
Serves 6-8
Tuna Fish Sandwiches
INGREDIENTS
DIRECTIONS
1 can solid white albacore tuna
1 or 2 hard boiled eggs, chopped
sweet pickle relish
sweet pickles, chopped (I always use Del Dixie)
1 small peeled apple, chopped
Miracle Whip salad dressing

Drain tuna
-
Mix remaining ingredients together except dressing

Add Miracle Whip to your desired consistency
Foil Wraps

INGREDIENTS

1 1/2 lbs ground beef
potatoes, cubed
baby carrots
salt
pepper
garlic
Options: You may include onions or other veggies. Can also sprinkle with dry ranch dressing mix.

Preheat oven to 350Ëš

Divide beef into four patties on four sheets of foil
-
Season beef with salt, pepper, garlic
-
Place veggies of your choice on top of beef
-
Season veggies with salt, pepper, garlic
-
Close foil to wrap around the beef and veggies
-
Place on baking/cookie sheet
-
Bake for 45-60 minutes or until veggies are done
Dandee Dogs (Corny Dogs)

INGREDIENTS
DIRECTIONS
​1 cup flour
2 Tbs sugar
1 1/2 tsp baking powder
1 tsp salt
2/3 cup corn meal
2 Tbs shortening
1 slightly beaten egg
3/4 cup whole milk
1 lb wieners

Wieners which need to be ice cold, but not frozen.

Mix all ingredients together except wieners

Dip wiener in batter and deep fry in oil.

Serve with mustard.
This recipe is from Mary Frank Carter who owned the Dairy-D-Lite located next to the old high school. This is a memory from my childhood. I ate my first corny dog there. My mother and I used to stop at the drive-in and get a corny dog after church on Sunday nights. WoWo loved a good corny dog! Mrs. Carter’s son James Otis owns Texas Burger.

Quick Chicken & Rice

INGREDIENTS
DIRECTIONS
2-3 boneless, skinless chicken breasts
2-3 pkgs Knorrs Rice Sides or Rice-a-Roni
(your choice of flavors)

Cut chicken into chunks
-
Brown in olive oil in large skillet or 4-5 qt saucepan
-
Once chicken is done, follow instructions for making the rice using the pan with the chicken in it
-
When rice is done serve as a one pot meal, or with sides
